How to Make Wheat-Free Bread

Many people, including those diagnosed with celiac disease, are unable to eat gluten and so must eliminate wheat from their diet. If you're one of the many, don't despair: there's a whole range of alternative, wheat-free techniques that will allow you to enjoy your favorite foods such as bread. Add this to my Recipe Box.

    Substitute another flour for wheat flour. There are many alternatives available in grocery stores and specialty shops. These include rice flour, tapioca flour, buckwheat flour, cornmeal, potato flour and ground almonds.

    Purchase gluten-free ingredients. It's not just the flour that your have to worry about; even things like yeast or baking powder can contain traces of wheat.

    Find gluten substitutes. Gluten is what gives bread its elasticity and springiness; therefore, it is impossible to fully replicate wheat bread without wheat. However, there are a number of products that do a very good job of replacing many of the properties of gluten. Foremost among these is xanthan gum. If you add a teaspoon or two to your non-wheat flour, it will make your bread less crumbly and more elastic.

    Try making white, gluten-free soda bread. You make this with eggs, buttermilk, rice and tapioca flour. Combine these, along with other standard baking ingredients, according to a recipe, being careful not to overmix the dough. This bread should bake for about half an hour.

    Enjoy brown yeast bread. This kind of bread is based on rice flour and cornmeal. Again, xanthan gum is another important ingredient. There are numerous recipes for this available online. This will give you a tasty, light brown bread with an even consistency. It will take about an hour to bake.

    Experiment with pancakes, cookies, pizza dough and muffins. There are tons of gluten-free recipes out there for all your favorite baked goods and pastries. Using fruit and ground almonds will give your sweet baked goods a moister texture.

    Try a premixed baking product. There are a number of premixed, gluten-free baking products you can buy in specialty shops or online. These can save you time when you're in a hurry, and the best among them is nearly as good as cooking it yourself from scratch.
