Vegetarian Diet for Kidney Disease

Kidney disease and renal problems affect the body's ability to remove waste, maintain chemical balance and keep its water balance in check. Causes for kidney disease include an overload of toxins, diabetes, hypertension, sickle-cell anemia and lupus disease. Swelling of the hands and feet are very common symptoms. The body builds up waste and salt and is unable to excrete harmful toxins. You can help control renal problems with a diet full of vegetables, fruit and soy--and there are wonderful recipes to help you regulate your kidney problems and live an active life.

Diet

    A diet of vegetables and fruits alleviates the risk of your body becoming overrun with saturated fats, refined sugars and processed foods. Asparagus, celery, bananas, carrots and cucumbers are full of chlorine. This nutrient aids tissue construction and helps the nerves that have become damaged from a suppressed immune system. Legumes, soy beans and seeds are full of the amino acid arginine. This amino acid is essential to proper kidney functioning.

Foods to Avoid

    Do not add salt or salty condiments to your diet. Soy sauce, ketchup, gravies and salad dressings contain an overwhelming amount of salt. Meat, eggs, chocolate, tea and spinach are also hard for your body to process. Fast food and many ethnic foods, such as Chinese, Mexican, Italian and Indian, should be avoided because of their high sodium content. Prior to going on a diet to help your kidney, it is recommended to undergo a three-day liquid fast. Liquids such as broth, fruit juice and vegetable puree are perfect for this fast.

Breakfast

    Start your morning with an energizing breakfast of tofu scramble. Scrape away at a block of extra firm tofu with a fork, so that it is minced. Add to a saucepan 2 tbsp. of virgin olive oil, onions, garlic, parsley and the tofu. Cook for 20 minutes or until tofu is a light golden color. Finish your meal with salsa. For those on the go, make a yogurt parfait by using sugarless yogurt, fruit slices and unsalted almond slivers.

Snack

    To help keep your blood sugar from fluctuating, eat five small meals a day. Take to work a snack of carrot sticks and celery. As a dip, use either hummus or herb goat cheese. To give your sweet tooth a treat, have a snack of apple slices and natural peanut butter. Both the goat cheese and the peanut butter have enough protein to satisfy cravings.

Lunch

    Fight fast food and vending machine temptations with a healthy lunch. If you have a grill at home, prepare an assortment of grilled vegetables and tempeh (see resources) . You can use your oven for this at 400 degrees Fahrenheit. Mix vegetables with feta cheese and balsamic vinegar. Another meal option is a burrito. Use a whole-grain tortilla and fill it with black beans, vegetables and baked tofu. Use salsa or guacamole as a dip. For a Mediterranean-themed meal, slather a wheat tortilla with hummus and add vegetables, feta cheese, whole-wheat tabbouleh and grilled tofu. You can use a tahini sauce for additional flavor.

Dinner

    Marinate a piece of tofu with lemon, orange juice and lime juice. Bake in the oven at 350 F with jalapenos and cubed mangoes. Serve on a bed of brown or wild rice. Veggie burgers also are great choices. You can use a whole-wheat bun and load up on lettuce, onions and tomatoes.

    Soups are very quick after long days at work. Take your pick from split pea, black bean or minestrone. Be sure if using canned soup that you use a reduced-sodium brand. As a dessert, bake a banana or peach. Top with either a non-dairy whipped topping or goat cheese.

    Eating to help your kidney problems doesn't have to be a drag. Get creative and use fresh products. You will not only start to feel better, but your body will thank you.
