Low Carb Meals on a Budget

Low-carb diets can offer several long and short term health benefits according to preliminary research by dietary health professionals. Low-carb diets don't have to be high in cost. In fact, low-carb vegetables like snap peas, bok choy, watercress and cucumber are actually less expensive than high-carb foods like deli meats, shellfish, breads and rice.

Breakfast

    Eggs are inexpensive and high in protein, which can make them a staple of any carbohydrate-free breakfast. Eggs can also be prepared in multiple ways, which gives them a versatility that can be used to create several different dishes. Pair hard-boiled eggs with some bacon for an energy-packed high-protein, low-carb morning meal. Eggs can also be scrambled with a little cheese and paired with vegetables like jalapenos. Other inexpensive, low-carb breakfast meals include cantaloupe with cottage cheese, berries and plain yogurt.

Lunch

    Sandwich wraps are a delicious and inexpensive alternative to bread, and a versatile way to create low-carb lunches. Wraps can be filled with inexpensive low-carb fillings like cold grilled chicken, boiled eggs, sprouts, lettuce and cheese. Tuna fish is another economical low-carb food that can be prepared in numerous ways for lunch. Tuna can be placed atop salads, made into a wrap sandwich or eaten right out of the can. Veggies and dip can also constitute a lunch meal, and can include zucchini slices, broccoli, cucumber, celery and carrots -- all inexpensive veggies that are good for you and low in carbs.

Dinner

    Chicken and seafood offer two extremely versatile entree staples that are both low in calories and carbohydrates. Oven bags can be purchased at a low cost and used to create myriad spiced-chicken-and-vegetable combinations. Simply fill the bag with chicken breasts and your favorite vegetables and spices and cook it until it is golden brown. Salmon is a relatively inexpensive low-carb fish that can be grilled and paired with an array of vegetables such as cauliflower, squash and asparagus.
