Reduced-carbohydrate diets like Atkins, The Zone Diet and South Beach call for creativity when you are putting together a meal for the typical American family. For example, there are many suitable alternatives to mashed potatoes. It just takes getting familiar with a few vegetables you might otherwise overlook in the produce isle. Add this to my Recipe Box.
Cauliflower
Steamed cauliflower can be pureed in a food processor with ingredients like cream, butter or just milk to create a smooth dish that looks remarkably like mashed potatoes and taste comparable.
Parsnip
Parsnips can be peeled, cut and boiled, then cooked similarly to mashed potatoes to create a delicious dish. The parsnip is a relative of the carrot and is sweeter than a potato.
Turnip
Turnips can be cut and peeled and cooked in a milk and spice mixture, then mixed, mashed, whipped or pureed just like potatoes. Parsnips have a bite similar to cabbage or radishes.
Celery Root
Celery root, also known as celeriac, makes a good alternative when cooked in milk and mixed with an ample amount of butter. It has a delicate celery flavor and is hard to discern from a potato in a recipe. The downside is it takes more time to cut and clean than a potato.
