Following a low-carbohydrate diet can make it challenging to enjoy some classic recipes, but quesadillas don't need to disappear from your weekly menu. Low-carb quesadillas are easy to make and require only a few ingredients. Because you have freedom to fill them up with quality protein, they can work for people on low-carb diets. Look for low-carb tortillas when shopping; these may have more soy protein in them, or they may be smaller than traditional tortillas. Add this to my Recipe Box.
Instructions

Prepare the first layer of tortillas. Lay out two tortillas on a flat surface and top them with one layer of cream cheese, a pinch of salt and sugar and one tablespoon of salsa.
2Prepare the second layer of tortillas. Place one fresh tortilla on the cream cheese layer, and press gently. Cover with it 1/4 cup of shredded pepper jack cheese and grilled chicken strips. Top with remaining salsa.
3Prepare the third layer of tortillas. Place one fresh tortilla on each of chicken layer, and press down firmly. Brush the entire surface with a teaspoon of canola oil.
4Lightly fry the quesadillas. Heat the canola oil in a frying pan and lightly fry quesadillas until cheese is melted and the sides are crispy.
5Add cheese. Sprinkle the Mexican cheese on entire quesadilla while hot, and microwave again for 30 seconds until melted.
6Cut the quesadillas into triangles and serve
